Har länge funderat på om man inte kan göra något med allt frukt och grönsaksskött som blir kvar när man gör egen juice. Det känns så dumt att bara slänga. Imorse gjorde vi morotsjuice med äpple och ingefära och för första gången fick jag ihop något riktigt gott av "resterna", så detta är vårt mellanmål idag.

 

 

 

Recept

 

2 ägg

1,5 dl socker

4 dl rivna morötter/äpple/ingefära

2 dl yoghurt

4 dl havremjöl

1 tsk kanel

1 tsk bakpulver

Lite salt

 

Vispa ägg och socker pösigt. Tillsätt yoghurt, frukt och grönsaker. Blanda de torra ingredienserna och rör sedan ner dem i smeten. Klicka ut i muffinsformar och grädda ca 10 min i 225 grader. Servera ljumna, eventuellt med smör.
